Raspberry Margarita

Happy First Day of Summer!!!  For cocktail hour today we’ll be celebrating with Raspberry Margaritas (or Razzaritas) in the shaker.  This is a super easy recipe that you can make for one or two people or adjust to make a big pitcher for a small crowd…or one or two people.;))

Raspberry Margaritas

Makes two drinks:

  • 4 oz of tequila
  • 2 oz lime juice, about 3 limes
  • 2 oz orange liqueur
  • 1/2 cup fresh raspberries
  • 2 Tbsp agave nectar or more to suit your taste
  • crushed ice
  • lime zest
  • 1/3 cup kosher salt

Juice the limes until you get 2 oz (1/4 cup) of juice.  Blend together the raspberries and lime juice.  Strain the mixture through a sieve into a small bowl to catch the seeds.  Add in the agave.

In a shallow bowl or plate, grate the lime zest over the salt and mix it in.  Dip the edges of the glasses in a little bit of water and then dip the glasses in the lime salt.

Pour the tequila, 4 oz of the raspberry mixture, orange liquor and ice into a cocktail shaker.  Shake for about 30 seconds and divide among the salt rimmed glasses.
