Breakfast is always a struggle for me. Unlike my mother, I’m not the morning person. I would love to spend hours to prepare and cook lunch or dinner with all of my love but not for breakfast. That’s why I became a huge fan of these Overnight Oats from Pantry Doctor.
What is Pantry Doctor Overnight Oats?
Wendie Schneider, aka The Pantry Doctor, is a registered dietician and healthy living coach who believes wholeheartedly that you are what you eat. Each jar comes packed with oats, seeds, spices and other mix-ins. All you do is add your choice of milk, sweetener and whatever toppings you desire, then let the jar sit until morning. Then, shake it up, top with a few of of the oatmeal toppings I suggest below, and EAT! They’ll keep for four days, which makes breakfast less of a chore since you can make it ahead.
Here is my two favorites:
Beautie:
With a name like “beautie” how can you go wrong? This flavor consists of rolled oats, collagen powder, walnuts, cacao nibs, chia seeds and acai powder. Little did I know, but acai is known as the “beauty fruit” because it is full of antioxidants and makes your skin look younger and healthier. I especially loved the big chunks of walnuts and hint of chocolate in this flavor.
Stress Less:
We all need a little less stress in our lives. Full of the most unfamiliar ingredients of them all, this flavor includes rolled oats, dried blueberries, pistachios, pumpkin seeds, cacao nibs, maca, red reishi mushroom powder and ashwaganda powder. So I may not know how to pronounce a few of those ingredients, but I do know that the dried blueberries added a slight tartness and chewiness that I adored.
