Cucumber Salsa

This is a quick and easy appetizer that comes together in a matter of minutes.  It’s light, it’s pretty healthy for you and it’s served cold which makes it perfect for summer entertaining.  The friend that passed this recipe along to me also suggested spooning it over grilled fish, which sounds amazing!

Cucumber Salsa

Makes about 3 cups

Ingredients

  • 2 cups finely chopped seeded peeled cucumber (about 2 large cucumbers)
    1/2 cup chopped cherry tomatoes
    1/4 cup chopped red onion
    2 Tbsp minced fresh parsley
    1 jalapeno pepper, seeded and chopped
    4-1/2 tsp minced fresh cilantro
    1 garlic clove, minced or pressed
    1/3 c reduced-fat sour cream (or Greek yogurt)
    2 tsp lemon juice
    2 tsp lime juice
    1/4 tsp ground cumin
    1/4 tsp seasoned salt
    Triscuits (thin)

Instruction

In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and seasoned salt. Pour over cucumber mixture and toss gently to coat. Serve immediately with chips.
